I’m sending an email with 11 document attachments. I’d prefer to send them as an icon to be opened by the recipient. However, they attach as the documents themselves. It is difficult to view a particular document without having to scroll through all of them. Any ideas how I can accomplish this? Thank you!

Since what your describing is sending them as a zip file, that is not a feature within iOS.
No, if your files are on your laptop, you should certainly be able to create a zip file with all the documents and email the zip file from the MacBook.
