Is there anyway that I can retrieve the information, data etc. on my stolen cellphone on a new I Phone?

If you had data synced to iCloud (e.g., iCloud Photos, iCloud Drive, Contacts, Notes, etc), that data will sync to your new phone if you turn those options on in it.

Also, if you had a backup of the old phone, you can use the backup to setup the new phone: Transfer content from your previous iOS device to your new iPhone, iPad, or iPod touch - Apple Support

If you didn't have any data set to sync and didn't have a backup, there isn't anything you can do once you no longer have access to the phone.

Depends. If you were syncing data to iCloud, and backing up either to iCloud or iTunes, it should be possible to recover most data.

If you were not using iCloud or backing up the iPhone, then likely no.
