How do you put an Apple keyboard into PAIRING MODE?

I cannot figure out HOW to put an Apple Keyboard into PAIRING MODE.

Every YouTube video totally bypasses this! I need some help!

It doesn't work like most ...

(most: press and HOLD power button to go into pairing mode)

MacBook Pro 13”, macOS 10.14
