My Apple Watch was just updated a few days ago and now the SOS alerts keeps going off. Even called 911 the first time

You can turn off automatic dialling

in the Watch app - SOS - Hold Side Button - disable that

Try a reset by pressing in the crown and side button until you see the Apple logo, then release both.
