Double Sided Print Option Grayed Out

I use an Epson printer that allows for double sided printing. I have been able to print from my Mac many times now double sided, but today when I tried the option is grayed out and won't allow me to click on the drop down selection. I've been searching for a solution and I see people say to go to System Preferences --> Printers/Scanners-->Options and Supplies --> and check the dual printing. But this isn't an option on my computer - there is no dual printing option and only shows the ink supply levels. So, then I found some information that said to uninstall the printer completely and this will fix it. Well, I tried this also and after all that I still show a grayed out double sided printing drop down.

I am really hoping someone has some information on how I can fix this. I hate wasting so much paper doing single sided printing.

Thanks!

MacBook Air 13", macOS 10.14
