iMac disc format
I’m erasing all on my iMac hard disc. What format should it be? APFS? Encrypted? Other?
Choose Mac OS Extended (Journaled) as the format; if you install Mojave, it will automatically change to APFS.

My immediate thought for a solution would be to start at the top of the list which is APFS and sing:
Eeny, meeny, miny, moe,
Catch a tiger by the toe.
If he hollers, let it go,
Eeny, meeny, miny, moe.
'moe' = Mac OS Extended (Journaled, Encrypted). ****!
It could have been a legendary solution, however as per babowa's excellent response - Mac OS Extended (Journaled).
