how do I change the format of the images I am trying to airdrop from my iPhone XR to my Mac?

You can't change the format before it is sent. What format do you want to change it to? On the phone, if it was taken with the iPhone camera it will be either HEIF or JPG, depending on the setting you chose in Settings/Camera. Both are compatible with Mac OS. If you need a different format after transferring you can convert it on the Mac.
