How can i cancel subscriptions and why is it still charging me after i have deleted the apps and never signed up for a subscription.

After a trial, most subscription start automatically unless cancel..
Deleting or not using an app does not cancel the subscription.
You have to be proactive and cancel it, see here -> View, change, or cancel your subscriptions - Apple Support
