How do I delete my phone that has been stolen

If you mean remotely wipe it and remove all content from it (and therefore remove it from your account) you can only do so if you had Find iPhone enabled on it, if you did log into the account on Find iPhone app on another iOS device or http://www.icloud.com on a computer.
