I have previously backup my iPhone up to my mac through iTunes, but switched to iCloud backup a couple months ago. Does my iCloud backup include and replace the old backups from iTunes? Can I delete the old iTunes backups from my computer since I am now using iCloud backup?

An iCloud Backup does not make a copy of a previous iTunes backup or vice versa. Each backup uses your device (e.g., iPhone) at the time of the backup as the source and each backup contains very similar information. See the following for a comparison: About backups for iOS devices - Apple Support

You can delete the iTunes backup from your computer if you want. Doing so will not affect your iCloud Backup.
