Double click for Apple Pay
Double clicking on the button only works occasionally. Is this because I can't double click fast enough?
Can I adjust speed of double click for this?

I don't think there is a speed adjustment. I have had the same problem in the past and found that if I keep the phone away from the reader and do the double click and then follow the prompt to hold the phone next to the reader that it works consistently while double clicking while the phone was near the reader often did not.
