How can I remove a Apple Watch from my iPhone

ON your phone open the Watch app, tap on the watch, then the i and tap Unpair Apple Watch. If you want to remove it from Activation Lock instead go to the Find my iPhone app or https://icloud.com/find, tap on your watch, put it in Lost mode, then Remove from Account. You can optionally erase it before removing it.
