Just got my watch today. Many basic functions don’t work.
1, can’t get to either grid list or regular App Layout. Tried to reset the Home Screen layout to default, nothing changed.
2. Tried to get to Control center. From Home Screen (watch) tried to press bottom and slide up, I get the customize button. I need help.

For your Control Center problem I think you are pressing too hard. Just let your finger skim over the screen from the very bottom to the very top.
Thanks. I actually decided to reinstall both the watch operating system and the software for the watch in my phone.
With so many problems it is probably best to point you at Apple Watch User Guide - Apple Support so you have all the basics easily described.
I am using the guide and the helpful tips just sent to me when I bought the watch.
I am not pressing hard. From the slightest pressure to max pressure it doesn’t work. Is there a setting somewhere. Other swipes seem to work fine .
There are no settings for access to Control Center. Maybe your software has got messed up in memory, it will not do any harm to try a forced reset. Simply press and hold both the Digital Crown and the side button (together, about 10 seconds) until the Apple logo appears, then release the buttons and let your watch restart.
If that doesn’t work and problems continue, you have a new watch with an entitlement to phone support to get you up and running. Contact Support (link) to take advantage of this. It’s not that we don’t want to help you, but it might be easier at this stage with instant voice responses rather than delays for typing everything the hard way.
