Erase all content and settings

If I erase all content and settings from an iPad that I'm signed into, will it erase everything (like photos and contacts) from my other devices? Or will it erase everything from just the iPad?

Just from the iPad you want to wipe. I would recommend to be safe, you perform a backup of the iPad before you erase all settings and content.
