Apple watch 3 not following preferred language order for dictation

I have an iPhone 8Plus with a number of languages setup as I study languages on Duolingo and need the additional alphabet keyboards. A few months ago, my apple watch, which up to that time had happily set its default dictation language to my preferred language of English, suddenly decided that it would default to Greek on every dictation.

My phone is set to English, English is the top of my preferred language order, but the watch stubbornly insists that dictation has to be in Greek. How can I make it default to English dictation without deleting all my additional keyboards?
