Tracking through ime and serial

when The only apple product I owned was an iPad Air and it was stolen while I was deployed. I had it locked with both password and thumb print how could it have been opened and erased. I logged into my iCloud account went to devices and there were none listed. Now the question I have is it possible to somehow track it down by serial number, IME or any of the other numbers located on the original box which I still poses.

A screen lock passcode and faceID or touchID does not prevent anyone from erasing and restoring an iOS device in iTunes.

But, to remove it from your list of tracked devices in your www.icloud.com account requires someone to know your AppleID password (and be able to get a 2FA code on one of your trusted devices or trusted telephone numbers if you use 2FA). So if nothing is listed in your iCloud account, then your AppleID has been compromised.

You cannot track any iOS device by serial number or IMEI number. The reason it doesn't appear on your list is the last known location will only appear for 24 hours if offline. Since it hasn't come online, it's highly unlike it's been erased or used as the whoever came in possession of it quickly realized they had absolutely no chance of using it.
