I understand iTunes is going to be dropped. How will I be able to backup my iPhone or iPad when iTunes is no longer available AND without requiring using iCloud for a backup.

If you decide to update your Mac backup (and syncing) will be done via Finder in the same way as is currently done in iTunes.
So, via Finder, I will be able to backup my iPhone/iPad and also sync photo alums to my iPhone/iPad?
