Base on what I used to know about the keyboard on iOS - the difference between those two kinds is actually the way you input the languages - so the Telex is more friendly for people who use both English and Vietnamese at the same time - as for the long English sentences; for ex: there are some alphabet we don't use in the beginning (W, Z) - so as long as you type this the rest of the sentence will be quite easily turn format to Vietnamese-English way.
So let's do the simple example: differences
the word "differences' - as we have tones systems - when you type it will be differences by Simple Telex - it will look like this "dìffểcé" instead of "differences" - you have to fix it with extra keys BUT the Telex will auto allow you to type differences right after the second f (because f, r, s are tones) - so it will be something like dì (first f) then differences (through end after 3rd f)
I don't think this will helped out because OS Mojave have the smart system which can recognize regular use to help we type in faster and easier for us to avoid the typo.

Offhand I don't see a difference, but I don't really know Vietnamese. Perhaps someone who does will see this and test them and see if there is some kind of different behavior.
