The Bluetooth symbol is not displayed on my iPhone6S any more. I am running the latest IOS 12.3.1, but Bluetooth is working ok.
How do I get the Bluetooth symbol to show again ?

You can't. It has been removed from the status bar. You can still view it in Control Center.
