It is not possible to change the width of the boxes in a Page Header (or Page Footer) in any version of Pages from Pages 5 up to Pages 8. When nothing else works, cheat. Here is a Page Header using the return key to create new lines.

P.S. I received an email notification of a reply by Viking. You could try that approach with a single-row table.
First of all, bad on Apple for using headers and footers that look like table cells but are not. You cannot customize them using a mental table paradigm.
You can suppress header, footer, or both in your document — and then replace either with a single-row table which will allow you to control cell width and content formatting. When you have it configured, you can then remove all table grid lines and make it a section master object (Arrange menu : Section Masters : Move Objects to Section Master). This forces the custom table to the background, and it will appear on subsequent pages of the section. This will export to PDF just fine, but may not export to Word or ePub properly depending on the tolerance of the translation engine.

I you want the right box of a Page Header to fill left into the middle and left boxes, make sure that the middle and left boxes are completely empty. Any entry (such as a space) in the left or middle boxes will 'block' the text in the right box. Turn on Menu > View > Show Invisibles to find the culprit.
Here is a Page Header with nothing in any box, with the cursor in the right box ready to receive text:
Ignore "Insert Page Number" and type or paste.
Here is a Page Header with an accidental space in the left box, with the cursor in the right box ready to receive text.
Now type or paste into the right box
The right box has been 'blocked' from filling left by that naughty space in the left box.

You don't. Numbers adjusts them automatically, depending on the content you provide.
Content placed in the box on the left is aligned with the left margin, and, if not blocked extends as far as needed across the page before wrapping to a new line.

For me, the boxes do not adjust I guess because they are ‘blocked’ as you say. So when I type past the edge it gets cut off as the box stays fixed with the default width I had sent you. I need the right box to adjust and slide further to the left in particular.

the trouble I’m having is that I do want to also have content in the other two boxes as well, not just the right box. But the right box is much longer than the other two and that’s why I’d like to lengthen only that one
