Renaming my server

I've setup Snow Leopard Server here on a Mac Pro, and am a week into migrating all our users off of Google Apps and to the new SLS server for mail, calendars, and so on. My problem is when we initially installed the OS, I named the server using an internal name "mack.mydomain.com" for example, and I ultimately renamed it to "mail.mydomain.com" in order to ensure that all the services worked well and used the outside email domain name, and so on.

I have renamed the server everywhere I can, including permanently changing the hostname from the command line. However, every day I come in, the server name in the Server Admin, Server Preferences and other tools has reverted itself to the old name. For example, this morning in Server Admin, the Mail General Settings had changed the hostname from the new one back to the old one. This caused some issues with email delivery this morning. Also, I had iChat server working just fine last night, and today it had changed the iChat domain from the new server name back to the old one.

In Workgroup Manager it is always using the old name, and I do not see a way to rename things for the Open Directory master. I wonder if that could be causing the problem?

The change is necessary due to the fact I paid for SSL certificates, and set those up in the various services. What I am seeing happen is the iChat server and other services "revert" to the original server name, and then fail to accept connections, presumably because they now announce themselves differently. I lost mail this morning coming into servers because the postfix servername changed back on its own.

I've got DNS aliases for everything, but a good example is the iChat service. It really only seems to let me connect using username@servername.domain, where the servername and domain match the original one. Works once I fix it, then next morning, overnight, keeps reverting.... go figure!
