I bought a bundle of e-books for my Kindle Fire, not from Amazon, and downloaded them onto my MacBook. On previous occasions I have successfully e-mailed books to my Fire as attachments, but this time the books did not show on the list of files that could be attached. Can anyone suggest a solution?

Try creating a new folder and put a book in the folder. See if you can attach the folder.

I see you are having some issues emailing documents from your Mac to be used on your Kindle tablet. You may want to take a look at this article from Amazon.

In that article, you'll find this:
"Documents can only be sent to your Kindle devices or apps from e-mail accounts that you added to your Approved Personal Document E-mail List. To add an e-mail account, visit the Personal Document Settings page at Manage Your Kindle."
