You can delete photos, music, videos, apps, texts, email, files, etc., to free up space. The only photos or files you can't delete directly on your iPad would be photos you synced via your computer using iTunes to the iPad directly. If you put photos or files on your iPad via iTunes sync, you'll need to connect your iPad to your computer and unsync them via iTunes.
