How to organise music on iTunes

Can anyone recommend a publication that takes you step by step through downloading music onto iTunes on a PC/Laptop/tablet etc. and then copying it onto a mobile device such as an iPod or iPhone. I have owned an iPod Touch for a few years now, and need to organise the music on it into playlists. Sadly I cannot find anything on the iTunes help that addresses this topic...
