The GPS+ LTE (Cellular) models have their own built-in cellular radio so they can work standalone when the paired iPhone is out of range. The GPS models don’t have this and must make all their communication over a Bluetooth link to the paired iPhone. In practical terms the GPS model can do all Watch functions when the phone is in range, but the cellular models can also activate their cellular radio to continue online and phone calls when the iPhone is unreachable.
