My husband and I are planning on traveling extensively and living in a travel trailer. We will have a Mac Mini as our computer onboard. Our concern is the range for the keyboard and mouse from the couch to the Mini mounted under the TV.
what is the current range for the Apple wireless keyboard and Trackpad?
is there a way to extend the range?

It’s Bluetooth 5 whose theoretical range is 40m indoors. Doesn’t mean it’s practically achievable, however, especially if it’s sitting under a TV. Best to use wired USB kB/mouse together with USB extension cables.
That’s true but the OP has indicated she’s buying 2018 in a separate post. BT 5’s been around longer than the latest Magic numeric keyboard so it’s also probably 5. Although the specs are silent on that...

I don't believe Apple have as of yet updated the keyboard to Bluetooth 5.0 and it would also depend on the Mac mini model. The Mac mini 2018 is Bluetooth 5.0 but the 2014 is only 4.0 according the Apple website. See - https://support.apple.com/kb/sp710?locale=en_GB
The Apple Magic wireless keyboard uses Bluetooth. (Probably Bluetooth 4.0)
The figure usually quoted for Bluetooth range is usually 10 metres and test I have seen at least in open air usually managed a lot more. (For example testing Bluetooth headphones.)
I would therefore not expect distance to be an issue in a trailer.
