Media Folder

ITunes keeps putting music into folders based on artist and album. How do you really stop it from doing that? I've already unchecked Keep iTunes Media folder organized.

This is why I stopped using ITunes a few years ago, just downloaded the lastest ITunes assuming such a basic thing would be fixed by now.

Assuming that you mean the folders found in Windows File Manager (rather than in iTunes itself), then it is the logical way to organise the files. The idea is that you use iTunes to look at and maintain your library of music, without the need to use Windows File Manager. Further, since artists still tend to release "albums", then what better way to store the songs is there than by album, under artist?

If you are using the word "folders" to refer to organisation within iTunes, that is; the headers, menus and lists. How do you want to view your music? It's almost certain that there is a way, iTunes has many sorting options.

Regardless of the setting of Keep media folder organized iTunes will always use its default layout for new content that it downloads, rips, or converts. Turning the option off won't change where anything already added to the library is stored. If you absolutely must have the media folder arranged in some non-standard layout then I have a script called CustomRenamer you can use, but if you go down that route you'll be adding extra housekeeping chores every time you add media or make a metadata change.
