I got a new iPhone 8 today wich came with 64 Gigabytes would I be able to switch it for a 128 Gigabytes

iPhone 8 is available in 64 GB or 256 GB capacity sizes only. If you bought it in the last 14 days, you can return it and get a 256 GB model instead. Otherwise you'll need to sell it on your own.

From the Apple Store, you can within 14 days.

If you bought it somewhere else, then it's their return policy.
