Danish characters doesn't show.

In Safari (and Firefox) on my Mac Pro (10.14.3) suddenly the special 3 Danish characters æøå will not show up on certain pages. Instead it will show an S like character:
What can I do?

The s comma below character ș is really only used in Romanian. I'm wondering if somehow you have a legacy font used especially for that language on that machine.
You might try going to Applications > Font Book and doing File > Restore Standard Fonts. This will normally move all user installed fonts to a separate folder. If it fixes the problem, you can then reinstall them one by one.

One of the two pages that have these issues are from the Danish tax authority and the other is from an online accounting service. Both pages have the issue in both Firefox and Safari on ONE of my Macs - Mac Pro 6.1 - while the pages display perfect on my Mac Book Pro, so I suspect the problem comes from OS on the Mac Pro that runs 10.14.3, while the Mac Book Pro runs 10.14.5

Yes I have some, mainly fonts used in my work as a music engraver.
I have tried to disable a lot of the arabic fonts in Fontbook but the menu is grayed out.
When I check the FontBook on my Mac Book Pro I also find a lot of different fonts, and here it works fine.

Exactly which "certain pages"?? Not possible to help without that vital info. Probably either bad font or bad charset= header in web page.
In FireFox, on one of these pages, do Tools > Page Info > General > Text Encoding and report what it says.
Also, do you have a lot of 3rd party fonts installed on that machine?
The Text Encoding says UTF-8

Okay, removing non standard fonts solved the problem. I will now try to install the fonts I need for my work with the music engraving.
