scanning in color?

I am having trouble getting a scanned image to appear in color.   I am not sure in which application the problem lies.

I am scanning a particular piece of paper.  The colors on the paper have significance.  I would like the scan to show the colors that are on the paper.

I am scanning with Epson Scan v. 3.9.4.7US.   I open the resulting scan in Preview v. 10.1.   

What I get is the scan in black and white.  

I have looked in the help menus of both applications.   At first review I do not see anything obviously helpful.

Does anyone know how to get a scan in color using Epson Scan and Preview?
