Thanks for all the help, ChrisJ4203 - problem has been solved. It must have been some kind of translation glitch as conversions done by the "ease..." program I used AND also by iTunes "Convert"/"Create AAC Version" weren't doing the job. Downloaded one called "EasyRingtones" and it worked like gangbusters to convert the .mp3 files to m4r form, and also found a website to download m4r files directly. For some strange reason, iTunes accepted both of those into my iPhone's "Tones" folder and they all work great. Yes, even the Default ringtone was changed with them! Happy camper again! Wouldn't have been so persistent without your help, so do appreciate it. I'm sure I will eventually find another problem to tax the wits of the Apple Community wizards, so stay tuned (pun intended!).
