When I create a contact in the Contacts app and enter a phone number, it puts in a random hyphen. If I delete the hyphen it reappears when I save the change. How do I prevent it from adding random hyphens to my phone numbers?

It automatically formats the numbers based on the country defaults for the given contact. It used to be editable, but they have removed that capability.
The only control you have is entering the number in its entirety and set the country of the contact in the address field, but it won't necessarily be the format you might want.
