So if I choose to do a monthly plan for the iCloud storage, that’s means I will get an extra 50 GB of storage each month?

That means that instead of the free 5GB free plan you will have a total of 50GB (an increase of 45GB). It will remain at the 50GB level as long as you continue on that plan. It is similar to renting space.
