How to change font size in the message list in Mail on the IMac?

Welcome!

The only way is to use the "Classic" view from Mail > Preferences >"Viewing" tab:

Then when you return to Mail > Preferences > "Fonts & Colors" tab, the field for Message List Font is now active:
