I can't use Apple Music as it keeps sending a verification code to an unknown number. How do I change this before I bog off to Spotify?

Apple Music does not require codes, your Apple ID does and it would be a number you used to enrol in 2FA.
Look at this resource. If you are on your trusted device you can get a code internally.
