Thanks for reaching back out. Because the Digital Crown needs to be turned to disable the Water Lock feature, and since this happens each time you go swimming, I would recommend looking into service options for the Apple Watch as there may be an issue with the Digital Crown.
As a note, since Water Lock is already disabled when you've finished swimming, you can manually remove water with these steps instead: "To manually clear water from Apple Watch, swipe up on the bottom of the watch face to open Control Center, tap Water Lock, then turn the Digital Crown to unlock the screen and clear water from the speaker."
