I have a series 2 Apple Watch and every time I turn on the water lock for my water workout, the watch somehow unlocks itself during my workout so when I turn the dial, it’s already unlocked :(

Thanks for reaching back out. Because the Digital Crown needs to be turned to disable the Water Lock feature, and since this happens each time you go swimming, I would recommend looking into service options for the Apple Watch as there may be an issue with the Digital Crown.
As a note, since Water Lock is already disabled when you've finished swimming, you can manually remove water with these steps instead: "To manually clear water from Apple Watch, swipe up on the bottom of the watch face to open Control Center, tap Water Lock, then turn the Digital Crown to unlock the screen and clear water from the speaker." Swim with your Apple Watch - Apple Support If so, after performing those steps do you see the Water Lock icon displayed on the Apple Watch before you go swimming? Here's the icon you should be seeing here: Status icons and symbols on Apple Watch - Apple Support. Let us know if you do see this icon before swimming, and if it does not display when you are done with your workout.

I do get the water lock symbol before I go in the water but it somehow turns off while I am swimming so, when i go to turn the dial to eject the water, I can't because it's not water locked anymore.
