Google search, how change country?

When I type anything to search using google as search engine in my iPad it always goes to google.ca. How can I change this for google.com or any other country?

I suppose it depends what your international settings are on the iPad: I'm in the UK and I get google.co.uk

To have ti go to a different country site, open the relevant one in safari (e.g. www.google.de) - but that won't become the default

I've changed my region format as stated above, closed safari reset history and cookies even turned off iCloud sync for safari yet when I do a google search by clicking google.com it defaults to google.com.hk I'm not currently in Hong Kong but do live there, it appears in Chinese. I just can't seem to get it away from Hong Kong, I'm seriously considering buying an ipad in the US.
