Default Calendar Setting is no longer available (iOS 12.3.1)

I want to use Siri for Google Calendar.

Apple says to change the default calendar setting in Settings>Calendar.

That setting is not available.

How does one make the Google Calendar the default?

Watch this GIF. You need to have more than one email account added with calendar option to get the Default Calendar

Thank you Dr. Sravan.

I call you a doctor because clearly you have a level of mastery that is not mortal... especially to Apple who was not aware of this in no less than three phone calls and with the assistance of senior level support people ... who twice suggested I backup and reinstall iOS because 'clearly there's a bad installation if a common setting isn't available' ... which is close to insane and would be a billion-to-one kind of event.

This is a bad bad bad interface design ... why wasn't it simply grey? ... and why isn't there an iOS preference to 'display disabled selections in blue - get help when selected'.

But there's actually now a second 'problem' ... when I use Siri to make a calendar event it makes it in the Mac calendar and then syncs to the Google calendar.

Is there not a way for Siri to not use the Mac calendar as it's no longer the default? .. because when it creates it I then cannot select the Google event to make changes.

Other apps work directly with Siri so what's the problem.
