Icloud with iTunes match
if I delete songs on my iPhone iTunes will they also be deleted from the cloud and my other devices that share iTunes cloud?

Yes. If they are stored locally in an iTunes library their cloud status is changed to removed, but they disappear from all cloud libraries at once. Make sure all your content is stored locally in at least one computer and ideally backed up as well.
