My New York Times app on my Apple Watch is stuck on a past date with old news. I’ve uninstalled NYT on phone and watch and restarted both devices and reinstalled app on both. No difference.

If you have removed and reinstalled the app it will automatically refresh the data. That means the problem is the incoming data feed from NYT contains stale data. I have seen this before from other news sources, and it usually seems to start updating again eventually. All you can do is be patient, or report the problem to NYT.
