Why Apple Pay isn't available in Middle East countries like Israel and Jordan?
Apple Pay has been launched to the community on 20 October, 4 years ago (2014).
why in some countries there are no apple stores or apple support at all?

It is possible that local laws prohibit/prevent Apple Pay from coming to that area but since we are not allowed to speculate that is just a guess.
