My iPhone 5s battery does not show battery health option

That's correct; battery health is only available on an iPhone 6 and later: https://support.apple.com/en-us/HT208387
If your 5s battery is not lasting like it used to, you can make an appointment at an Apple store for help. They can run diagnostics and let you know if the battery should be replaced.
