How can I prevent my photos from being added to my wife’s device?

Yes. Same Apple ID. Icloud phots enabled. Sharing enabled. What about Family sharing?

Are you using iCloud and the same AppleID?
If you are using the same AppleID and iCloud Photos or My Photo Stream is enabled, then any photo you import to your Photos Library will be synced to your wife's iPhone.
- Either use different AppleIDs,
- or do not use iCloud Photos Library or My Photo Stream.
Check the Settings > Your Name > iCloud > Photos on both your devices.
