apple tv gen one/two
Is the apple TV gen 1 or 2, (which I have) still able to be useful or tradin for the newest one?
Why are the new ones so many gig?

You won’t be able to trade them into Apple.
You can try selling them though I suspect they aren’t worth much, with the 1st gen unusable for most and the 2nd gen is headed in that direction.
The current models support apps, which can be downloaded to the device. The larger capacity is for those who wish to download a lot of apps, specifically games.
