How do I access my phone logs over 1 month old?

The iPhone's phone log is not based on time, it is based on number of calls. The Recents list will only display the last 100 calls, incoming or outgoing. If you wish to see more than that, you should be able to get that information from your carrier. The iPhone will not display more than the 100 entries, and there is no access to older data. Most carriers provide information in your web access account to view your phone history, based on billing dates. If you need assistance with that, contact your carrier.
