Change Apple ID and keep existing data/icloud/photos/contacts/etc.

I have an employee that is using a company email for their Apple ID. We need to keep the existing email address so that I can forward the work emails to myself, but the employee wants to keep their contacts/photos/documents/etc that is attached to that existing Apple ID.

I'm assuming if we just go in and edit the existing Apple ID to have a different login, I won't have access to that work email any longer?

Or can they create a New Apple ID, and we can transfer over their iCloud photos/docs/contact, but not the email?

Whichever we do, I need to access the existing email and contacts but my employee will need a new Apple ID.
