I have an Apple Watch series 4. I know how to set the time to 24 hour through my iPhone and the watch app. But how do I have the analogue clock display instead of a 12 hour clock, but one with a 24 hour as well? Like a regular wrist watch?

Check the Face Gallery and look at the options for the analog faces. I don't know if there is one that will do what you want but that's where it would be if it exists. My research indicates that there is no such thing but, I couldn't find anything really recent so, perhaps something has been added.
Are you asking about an analog face? Or a digital face? In the U.S., at least, "regular" analog watches (and clocks) display 12 hours.
Have you looked at Face Gallery in the Watch app?
