Change the DEFAULT alert time for All Day Events in Calendar for Mojave v10.14.5

Currently, when setting an event the calendar allows you to set a DEFAULT time (9:00am for example). However, many times the event has already begun for the day. I would like to change the DEFAULT time for All Day Events to 6:00am or 7:00am WITHOUT having to set a CUSTOM time for each individual event. Is it possible to change the DEFAULT alert time for All Day Events?

How do I change the "options" on calendar pop-up notifications? I am running Big Sur on a MacBook Pro and the "newfangled" responses for pop-up reminders drive me nuts! When I create an alert for a calendar entry that reminds me 1 week before something is due, the pop-up notification no longer has any other options than "snooze" (=5 min!), or snooze up to 1 hour. That's ridiculous - it used to be (Catalina) that one could choose 1 hour, 1 day, or "until date of reminder" (or until 5 min. before reminder etc.). Is there any way to revert back to the much better functionality we had before? And while I'm at it, why can I no longer change the time zone of an entry in "calendar"? Is there a hidden trick?

Alert Times for All Day Calendar Events Is there really not a way to customize the alert time for an all-day event in Calendar? My day starts well before 9am, so a reminder/alert @ 9am is basically dead to me. I've tried to work around this by using a scheduled summary, but that doesn't seem to fix the problem. I really can't believe Apple only gives 4 alert options here, 3 of which have that 9am time built in...am I missing something? How can this be?

Change default time of all day events in Calendar Is there a way to change default time of all day events in Calendar? In Calendar Preferences/Alerts/All Day Events the default time option is 9:00am. I would like to change this to 7:00am if possible. Calendar version 11.0 (2245.5.2)
