I would like to change my Apple ID from ****@ hotmail.com to my updated email address ****@ gmail.com
I had created a new Apple ID as I was instructed to but now I can't seem to change it as it's already active

If you created/use a new Apple ID, you will lose access to some of your data and the purchases made with your existing Apple ID.
What you need to do is a name change to your Hotmail ID. Since you used the Gmail to create a new ID, you will need a new email address if you want to change it now.
