can I use the iPhone XR I bought recently at Apple store Hong Kong in Germany? What are the main differences?

The main difference is that that device should support 2 physical SIMs (not 1 SIM + 1 eSIM)
To be sure, contact a mobile carrier in Germany, explain your doubt and ask them.
